Pumpkin Spice Cookies

1 Cup sugar
2 sticks butter-softened
2 table spoons maple syrup
2eggs
1 cup pumkin (I use fresh but you can use the canned pumpkin)
1 1/2 tsp. all spice
1/4 tsp. nutmeg
Pinch of ground cloves
2 1/2cups flour
2 tsp baking powder
pinch of salt

Cream sugar and butter til light and fluffy. Add syrup and eggs. Mix together. Add pumkin and mix. Mix flour and baking powder, salt, cinnamon, allspice, nutmeg and cloves in seperate bowl then Add to batter. Mix well. Drop onto lightly sprayed cookie sheet. Bake for 10 min at 350. Cool on sheet for a few min, then cool on wire rack. I frost them with homemade cream cheese frosting, and Chanelle loves sprinkles on them. My family loves it when I make these cookies. I serve them at Halloween with hot cocoa and at Christmas with Homemade Eggnog. If you want a quick recipe that is close to these, use 1 box Spice cake mix with 1 small can pumkin pie filling. Mix them together, drop on greased cookie sheet and bake for 11 min at 350. Cool for 5 min then finish cooling on rack. Frost with cream cheese frosting.

Chili

Thanks Davinna for this, I can't wait to try it!

1lb. hamburger
1 onion
1 green pepper
1 can black beans, drain and rinse
1 can red kidney beans, drain and rinse
1 can tomatoes
1 small can tomato paste
Chili powder to taste
garlic, salt and pepper to taste

Brown hamburger, onion and green pepper. Put in crockpot and add the rest of the ingredients. Add water if needed. Cook on low for 6-8 hours. Serve with tortilla chips, shredded cheese and sour cream. When I brown the hamburger I season it with the chili powder. Then add more to make it spicy. I also serve this with scones.

Scones

Homemade Scones- Thanks Davinna again! Scones are my absolute fav.

1quart buttermilk
2tbs. yeast
2 tbs sugar
2 eggs well beaten
6tbs. oil
2 tbsp salt
3tsp baking powder
1/2 tsp baking soda
6-9 cups flour (add until it looks right)

Warm 1 cup buttermilk, add yeast, sugar oil and eggs. Stir well and add rest of buttermilk and dry ingredients. Stir and knead for 5 min. Let rise. Roll out 1/2 inch thick on flour surface. Cut into squares or triangles. Poke hole in middle and fry in oil until golden brown.
My family loves my scones, but if you need a faster recipe just use Rhodes frozen rolls. Thaw and then roll and fry. I like making mine from scratch but they both taste good.

-Homemade Honey Butter

1/2 cup butter-soft
1/2 cup honey
1/2 cup Whipping cream
1tsp vanilla
Cream butter with honey. Slowly add whipping cream beating constantly until mixture is fluffy then add vanilla. Keep refrigerated.

Home Made Hot Cocoa

3/4 cup powdered nondairy creamer
1/2 cup nonfat dry milk
1/2 Milk Chocolate chips
1/4 cup sugar
1/4 cup brown sugar
3 tbs unsweetened cocoa powder
1/8 tsp. salt
Mix together in large bowl. Put in medium sauce pan and add 6 cups boiling water. Stir until dissolved and chips are melted. Keep warm on low heat.
Serve with whipped cream or marshmallows.
I make this every Halloween to go with my Chili and scones and Christmas to go with cookies. I actually have jars of it in my food storage so that I always have it on hand. It's one of our favorites.
